Skålede mandler bør du gjøre ett par dager i før du skal lage makronene, slik at de er helt tørre når du skal male dem sammen med melis. Det er også mulig å kjøpe ferdig skålede mandler, det gjøre prosessen enklere og du er sikker på at mandlene er tørr.<br />
<br />
Ha mandler og melis sammen i en foodprosessor, kjør det til blandingen er helt finmalt, akkurat som mel. Ved å sikte blandingen etterpå, får du fjernet de mandelbitene som ikke er blitt malt.<br />
Pisk eggehvite til skum, tilsett sukkeret og pisk videre til marengs. Dersom du har SpeedyChef fra Tupperware, så er det fort gjort å lage marengs i den.<br />
<br />
Lag sukkerlake av vannet og sukkeret, la det koke noen minutter, slik at det tykner. Hell det i marengsen mens du fortsatt pisker.<br />
<br />
Så har du i mandelmelisblandingen og 2 eggehviter til, vend dette forsiktig inn i marengsen. Ønsker du farge på makronene dine, så blander du inn valgfri konditorfarge til slutt.<br />
<br />
Marengsen har du så opp i en sprøytepose, (Tupperware sin er en jeg anbefaler), med rundt tupp. Sprøyt ut små runde pletter på ett bakepapir. Tupperware har ett eget silikonbakeunderlag med rundinger til makroner. Ha avstand mellom makronene.<br />
<br />
La makronene stå på kjøkkenbenken til tørking før steking (30 - 60 minutter).<br />
Stekes på 160grader på nest nederste hylle i 8 - 12 minutter. Makronene er ferdig når de løsner fra bakeunderlaget.<br />
Avkjøl makronene før du fyller med det fyllet du ønsker<br />

Putt alle ingrediensene i en kjele. Sett varmen på medium, blandingen skal ha ca 40 grader,, når den har nådd det, skrur man varmen opp litt. Slik at kremen tykner, 60 - 80 grader. Så setter man varmen på full styrke, og lar kremen få ett oppkok. La det småkoke i 1 minutt.<br />
Kjør så kremen i stavmikseren, så får du en glatt og jevn krem.<br />
Avkjøles for den fordeles på makronene.<br />

Legg 2 butterplater på et stekepapir i 20 minutter, slik at de blir tint. Kjevles så ut til dobbel størrelse, prikk tett i tett med en gaffel slik at ikke deigen hever seg når de blir steikt. Stekes på 180 grader i ca 10 minutter. Med en gang de er tatt ut av ovnen, setter man en rund springform på 24cm oppå. Så får man en nøyaktig runding som passer i forma etterpå. Gjenta dette med plate nr.2. Disse kan du lage noen dager i forveien, oppbevar de innpakket i papir i romtemperatur.</div>
